We made soup with the roasted asparagus and a bit of the onions/ peppers – grilling really adds a huge amount of flavor without needing much except a bit of salt and pepper.

I got a thing called a “plancha” from Lodge, the cast-iron people. Basically it’s a two sided cast iron griddle, one side plain like a flat-top, the other with ridges for grill marks. It keeps the asparagus and onion slices from falling through onto the burners.
