It’s just the two of us here today, so things and emotions are uncomplicated by Leftwing relatives, yay!
First we made a delicious Paleo Chimichurri sauce for tonight’s rack of lamb:
1 cup Flat Leaf Parsley
3 cloves Garlic, chopped
2 Lemon, juice
1/2 cup Extra Virgin Olive Oil
1 tsp Salt
1 tsp Black Pepper
1/4 tsp Red Pepper Flakes
Then for lunch we had butternut-squash soup.
Roast chunks of squash to caramelize, add chicken stock and some onion and spice to flavor, and then blend the hell out of it, adding milk to make it creamy.
Yum. And filling too!
Now I gotta go empty another rain barrel. Our nice neighbors across the street have invited us over later for a glass of wine, so that’s Thanks too!
UPDATE: Scratch the little rack-of-lamb. Neighbors had turkey, ham, stuffing, green-beans, mashy ‘tasters, yams with marshmellows — everything and twelve other people with kids and great-grand kids. It’s a big happy, blended family – so Thanks s’More!
